Sunday Brunch with Biscuits

Sunday on a cold winter morning, though the huge dump of snow we had yesterday is almost gone - that's winter in Vancouver.

Sunday brunch, and as I have always loved biscuits and was inspired to try to Paleo-ize a recipe I saw on a cooking show on television yesterday, and the results were really good - here's the recipe for everyone to try - bet you can't just eat one.









Primal Bacon, Cheese and Onion Biscuits
Preheat oven to 350 degrees
Makes six biscuits.

1 cup tapioca flour
1/4 cup arrowroot
1/4 cup coconut flour
1 tsp. baking powder (preferably aluminium free)
1/2 tsp. salt
1 egg
1/4 warm water (+ 1 tablespoon extra if needed)
1/2 cup melted coconut oil
5 slices of bacon, cooked and crumbled
1 cup grated cheese (I used lactose-free cheddar as Paleo Grandad is lactose intolerant - it's not bad)
1/4 cup minced, browned onions

  1. In a stand mixer, combine the flours, baking powder and salt, blend on the lowest speed yo avoid flour from the kitchen cabinets.
  2. Stop the machine and add the egg, water and coconut oil, mix on slow speed until combined.
  3. Stop the machine again and add the bacon bits, cheese and boned onion bits and mix on lo speed until the bacon, cheese and onion bits are distributed evenly.
  4. Turn out onto a board lightly sprinkled with tapioca flour, and pat out into a rectangle about 3/4 inch thick.
  5. Cut into six even pieces and place on Silpat covered baking sheet.
  6. Bake for 25 minutes or until lightly browned.
